Quick & Easy Lemon & Poppy Seed Muffins

Since the arrival of our gorgeous daughter Abbie, five weeks ago, finding the time to bake has been an impossible task.
Today however, I managed to throw together these delicious, light & fluffy muffins.

Ingredients for 12

250g Plain Flour
100g Caster Sugar
3 tsp Baking Powder
Grated Zest 1 Lemon
1 Tablespoon Poppy Seeds

Juice of 1 Lemon mixed with enough milk to make 180ml Liquid
80 ml Olive Oil
1 Egg, beaten

Preheat the oven to 200C & line a 12 hole muffin tin.
Mix all of the dry ingredients together in a large mixing bowl.
Mix together all of the wet ingredients.
Pour the wet ingredients into the dry and mix until just combined. The batter should not have a smooth consistency, instead it should be a bit lumpy.
Divide between the muffin cases and bake in the oven for 20-25 minutes.

These muffins are delicious with a cup of coffee or make a nice addition to a lunch box.
